spinach cream
Ingredients:
1 onion
1 clove garlic
Water
100 g of cream (whipping cream) or evaporated milk (lighter)
Extra virgin olive oil
Salt and pepper
Preparation:
Make this creamed spinach is very easy ... The first thing we do is fry the onion and garlic in a pan with a little olive oil. Add spinach, salt and cast cover with water. Depending on whether they are fresh or frozen spinach will vary the time that should be boiled in water. Fresh spinach for about 5 minutes and frozen for about 7 minutes.
Once cooked remove part of the cooking water and beat with electric mixer, until a texture to our taste, more or less liquid. If you want more liquid you must add more cooking water. To achieve a finer texture we can move through the food mill, something children will surely appreciate it and will eat better.
Add the cream or heavy cream, and if you want more light you can use evaporated milk. Tried and season if necessary.
