cucumber cream


Ingredients:

2 cloves garlic, crushed
1 small onion cortadita
1 tbsp extra-virgin olive oil
4 TZS divided shucked cucumber sliced and seeded
1 tablespoon lemon juice
1/2 cup light yogurt
1 1/2 cup vegetable broth or low-salt chicken
1/4 chopped parsley tz
1 avocado, diced
1/4 teaspoon freshly ground pepper
1/2 tsp salt

Pinch of cayenne pepper

Preparation:

Heat oil in a pot. Pour garlic and onion and stir-frying, stirring, until sides for 5 minutes. Add lemon juice and cook for 1 minute, then add 3 3/4 cups cucumber, broth, salt, pepper and pinch of cayenne and simmer. Kitchen 8 to 10 minutes until the cucumber is soft. After cooking, put in a blender at low speed and make the cream. Add the avocado and parsley until smooth mixture. Pour this mixture into a bowl or pot and add the yogurt, stirring. Finely chop the cucumber and add remaining. It can be served hot or cold, depending on your tastes.
