Cucumber soup, tomato and yogurt


Ingredients:

1/2 liter of plain yogurt (500 g)
2 cucumbers
4 sprigs of chives
4 apples Tomatoes
2 Tbsp. olive oil
1 1/2 cups chicken broth
Salt and freshly ground black pepper to taste
fresh herbs: parsley, dill or cilantro

Pepper to taste

Preparation:

Slice them finely. Let stand in salted water for fifteen minutes to release the water. Pass the tomatoes in hot water, peel them, chop them in half and cut into pieces. Mix chicken broth, yogurt, salt, freshly ground pepper and pepper to taste in a tureen. Use a whisk. Add cucumbers and tomatoes. Season with olive oil. Cool in the refrigerator for one or two hours. Add the chopped chives. Garnish with fresh herb of your choice
