Ingredients:
3 large potatoes
- 1 onion
- 4 or 5 eggs
- Extra Virgin Olive Oil
- Salt

Preparation:

Peel, wash and chop finely sliced potatoes. Also we chop the onion.

Boil potatoes and onion in oil over low heat. To get a better cooking, cover the pan with a lid.

Beat the eggs with a pinch of salt. Escurrimos potatoes with onion and incorporate the eggs.

We put a little oil in a pan and pour the egg mixture and potatoes. Let moving to prevent sticking.

After 5 minutes we will give the first good and cook the other side for another 5 minutes.
