cream of zucchini
Ingredients:
8 large zucchinis
1 Pk. scallions
1 onion
2 Tbsp. of butter
1 cup heavy cream
Salt and black pepper to taste
Parsley or chives for garnish
Preparation:
Prepare in advance a broth or chicken broth, or a liter of water dissolve two cubes chicken concentrates. Chop the scallions (white part) and chopped onions. Sudar in a pan with butter. Place the broth in a pot and add the onion and chives sauce. Wash and chop the zucchini into pieces with your skin. Add the bouillon with the sofrito. Cook until the zucchini are tender. Allow to cool and liquefy. Season with salt and pepper to taste. Heat before serving and add a tablespoon per cup of cream. Garnish with chopped parsley or chives.
